Our new 2017/18 Harvest Hojiblanca from Spain hails from the Priego de Cordoba Region (DOP Priego de Cordoba) and has a flavor that is fruity and bold, with notes of apples and fresh cut grass. It is slightly bitter with a spicy bite. It is excellent for using in cold preparation and pairs wonderfully with fish.
The Priego de Cordoba region is located in the southeast of Cordoba province in the heart of Andalusia.
Timing of harvest:1st half of November.
Harvesting method: Manual and beating.
Extraction system: On the same day as harvest, using a continuous, two-phase system involving cold pressing and centrifugation.
